It’s easy to whip up, you only need one pot and you can make a huge batch, freeze some and eat some for leftover lunches.
It’s very filling, hearty, packed with amazing ingredients for your body and the curry gives it a little flavor kick you’re going to love. We can’t take all the credit for coming up with this one, you can find the original recipe here. We did put our own spin on it by adding pineapple to balance out the spice and give it a little sweetness. It is delicious!
Serve this curry over Quinoa or other Ancient Grain and you have a complete meal.
